Its really just comes down to a good combination of parts that work together for your goals and the powerband you want. When I say "combination of parts" I mean more specifically the valvetrain/cam that is used. I try to be as criitcal as possible when selecting a cam and my valvetrain parts are not skimped on either. My car has never been on a dyno before and most likely will never be. It is tuned on the street and I get the results at the track.
If you take your time and talk to the right people you can built a pretty stout motor. Im not a big believer in needing more cubes to go fast (to a point). The main issues is being able to rev high enough and quickly.
