WTF is normal driving in an Fbody?
I'm pretty sure the problem we had was not because it was a v6 but moreso because it was a 15 year old pump. I do know I've read on camaroz28 of atleast one guy running a cammed LT1 with 30# injectors with his stock v6 fuel pump and has done quite a few track passes with no issues.

If you plan on starting the car in the winter I would encourage you to drive it a good 10 miles, to get the OIL up to tempature, the exhaust hot, and turn on the A/C.

If you plan to start the car and let it idle for 10 minutes, I think you are doing more harm than help. If my chevelle were done, I would take it for one last good drive, clean it up, pinch off the fuel line to make it die. Stuff a few rags on in the exhaust pipes, Disconnect battery/battery tender, Add a car cover and then drive into a car bag with desicant to keep the moisture out.

If you need a car jacket, I can get you a good deal on one.
