Cool deal, but don't always buy into what the sales reps feed you. Can't remember much about it as I saw it a few years back but I can do some digging if you want. I can guarantee it will be a pain in the ass if you do it yourself (or pay out the ass to have it done) but I know with your attention to detail that it would come out awesome. There was even a company selling all the correct leather pieces if I remember correctly. Have you seen 6LE rear seat deletes? Looks pretty good and he can even build storage spaces in it or incorporate a sound system
