No the tach never jumped around at all and it would fire back up sometimes, other times you had to wait 10-15 minutes. I think we got it fixed finally. The new MAF seems to be working now, it stalled twice after install but today I was able to get my temp above 165 without stalling. Idled perfect with temp up to almost 210 before I went down the road. Thanks to everyone who helped chase it problem. Guess I should have bought the MAF from the start, figured cleaning it would do the trick.

gtp stalls
I too have a 99 gtp that stalls for no reason, sometimes it will not completely stall if under accelleration, I will feel a short loss of power and then my TCS turns off along with my tach going to 0 but the engine recovers, everything is back to normal upon restart. It has stalled at idle along with every speed.
