It seems to be a little difficult to find tan interior parts. I have a set of gray door panels I can steal the plastics from, and rebuild mine since the leather panels are perfect. So what kind or brand of paint should you use for doing this? Does it matter?

SEM paint is what I use as well.

SEM for sure. If at all possible, get the stuff in a can and shoot it with a real paint gun. I've had much better luck with the results. You can also get an exact match to your color this way by going to Painters Supply (or equivalent store) and giving them your interior paint code.
